walnut cranberry oatmeal cookies

Walnut Cranberry Oatmeal Cookies – a sweet cookie contrasted with tart cranberries, soft and chewy oatmeal contrasted with crunchy walnuts.

This week’s cookie is a revisit of an oatmeal cookie I’ve made several variations of in the past. It’s a good one. In fact, the white chocolate cherry oatmeal cookies have been requested several times. Honestly, they’ve all been delicious, but this? This one is absolutely my favourite. Oatmeal cookies are always good, of course, but this one also has crunchy walnuts and tart cranberries. You all know I love citrus, right? Well I love cranberries for the same reason. And they really work in this cookie.  (more…)

chewy chocolate ginger cookies

Chewy Chocolate Ginger Cookies – a rich, dense, chocolate cookie, with a bit of heat from lots of tiny pieces of candied ginger. A perfect combination!

I’m thinking it’s time for a chocolate cookie. Does anyone not want a chocolate cookie?? But not a plain chocolate cookie. I’m thinking chocolate ginger cookies. I’ve made cookies with this combination of flavours before, but this particular recipe is a little different and includes finely diced candied ginger. This adds a bit of heat and is a great contrast to the rich dark chocolate-y cookie – like with these chewy chocolate gingerbread cookies (one of my all-time favourites), or these chocolate diablo cookies (a great example of how something spicy can work together with chocolate to create an amazing flavour).  (more…)

peanut butter chocolate chunk cookies

Peanut Butter Chocolate Chunk Cookies – slightly crispy on the outside, soft and chewy on the inside, with great peanut butter flavour.

Last week’s macadamia chocolate chip cookies were a big hit – one of my coworkers said they were his second favourite of all the cookies I’ve made to date (yay!). But while they included peanut butter chips, the peanut butter flavour isn’t very apparent. A few people asked “are you sure there’s peanut butter in here?” But that was fine, because peanut butter wasn’t supposed to be the star of those cookies – it was the combination of macadamias, chocolate, and peanut butter chips. But still, I thought for this week I should go the other direction, and make it all about the peanut butter. Plus chocolate chips, of course (I’m not a barbarian).  (more…)

vegetarian paella

Brightly coloured vegetarian paella – a delicious and filling blend of rice, vegetables, and legumes.

Check it out, I actually have some real food to share with you this week. Yes, yes, contrary to what you might think based on this blog, I do eat real food occasionally (don’t worry, we’ll be back with more cookies shortly). I’ll be honest here – I’m pretty lazy during the week and am most likely to just throw together a wrap or a salad for dinner. As for lunch? If I don’t have something already prepared, I’ll just grab something from the local deli. For that reason, and I’ve mentioned this before, I’m a big fan of cooking a huge pot of something and freezing individual portions to take for lunch during the week. I have a few favourite recipes that I make often, like this vegetarian chili and this mexican vegetable stew (omg, so good), and this is another one of them. A brightly coloured vegetarian paella – a delicious and filling blend of rice, vegetables, and legumes. (more…)

peanut butter chip, macadamia nut chocolate chip cookies

Peanut Butter Chip, Macadamia Nut Chocolate Chip Cookies – with bursts of peanut butter and chocolate flavour from all the chips, plus crunch and buttery flavour from the macadamias. A great combination of flavours!

This week’s cookie is a little bit decadent, with peanut butter chips, chocolate chips, and macadamia nuts. Macadamias always make a cookie seem just that much more special. Sounds like a great combo, right? And I just happened to have enough macadamias for this recipe, leftover after the macadamia chocolate chip cookies I made a couple months ago, so I thought why not? And really, that’s pretty much how I choose my recipes every week. Sounds good – do I have all the ingredients? Yes? Then why not.  (more…)

cowboy cookies take 2

Classic Cowboy Cookies – a rich, chewy oatmeal cookie, loaded with coconut, crunchy toasted pecans, and lots of gooey chocolate chips. Delicious!

This is my second “cowboy cookie” recipe and I think I now have a better understanding of what a “cowboy cookie” is. The first time I made them I had no idea what they were. How are they different from kitchen sink cookies? Do they always contain certain ingredients? I’ve done a bit of reading since then and apparently a cowboy cookie is a dense, chewy oatmeal cookie that’s also loaded with other ingredients – typically coconut, pecans and chocolate chips. Does that sound right to everyone? And what do you know, this cookie has all of those things.  (more…)

triple chocolate chip cookies

Soft and chewy Triple Chocolate Chip Cookies, taking it to the next level with tons of semisweet, milk, and white chocolate chips.

I was totally craving a basic chocolate chip cookie this week, and I’ve had this one bookmarked for awhile. This recipe is from one of my digital cookbooks – I only have a few of them, but I always forget about them! It’s so much easier to gravitate towards the physical cookbooks on my coffee table, with their beautiful photography, brightly festooned with post-it notes to remind me of the recipes I want to try. I’m a big fan of the convenience of ebooks though – especially for those of us who like to take novels on vacation – it’s much easier to carry around one little electronic device than a stack of paper books (I don’t know about you guys, but one novel is never enough). But the flip side is that as I mentioned, while I’ve had this book for awhile, I keep forgetting about it. So this is the very first recipe I’m trying from it. No complaints so far! I don’t think I’ll be forgetting about this book again. Fingers crossed, anyway.

So, to recap. For novels? Big fan of the ebooks! For cookbooks? I definitely prefer the physical copies.  (more…)

ginger citrus cookies – cookie swap

These Ginger Citrus Cookies are wonderfully flavourful spiced molasses cookies, with candied citrus peel for a refreshing twist.

These Ginger Citrus Cookies are wonderfully flavourful spiced molasses cookies, with candied citrus peel for a refreshing twist.

It’s Cookie Swap season!! That time of year when us baking nerds get together and get all excited about cookies! Non-bakers just don’t understand. Once again I organized a cookie swap among my coworkers – this year we had 13 people involved! So many cookies… And this is also my second year participating in The Great Food Blogger Cookie Swap. I had so much fun doing it last year – and got so many delicious cookies from my fellow bloggers – that I couldn’t wait to do it again. I had a lot of baking to do this year.  (more…)

Double chocolate peppermint cookies, full of lots of chocolate chips and topped with crunchy crushed candy cane. A perfect combination of flavours.

It is definitely baking season. I went to stock up on sugar the other day and the shelf was almost completely empty – I got the last bag! Everyone is gearing up for their holiday baking. Baking at this time of year makes the house feel so cozy and warm and homey.

And speaking of holiday baking, not only did I participate in the Great Food Blogger Cookie Swap again this year (stay tuned – I’ll be posting my recipe for that one on the 16th), but I also organized another cookie exchange with my coworkers. We did it last year and it was great fun (and delicious). I think we had 9 people participating last year. This year we had 17 people signed up! Sadly, a few had to drop out at the last minute, but we still had 13 people in the end. And so many delicious, delicious treats. I might be hoarding them all to myself.  (more…)

double chocolate peanut butter swirl cookies

Double chocolate peanut butter swirl cookies – a rich chocolate cookie, with chocolate chips, peanut butter chips, and smooth peanut butter swirled throughout.

This is my second cookie using the Milk & Cookies double chocolate base cookie recipe. The first time I made them we added coffee flavour to make Mocha Latte Cookies. This time we’re adding peanut butter. What’s better than chocolate and peanut butter?  (more…)

soft gingersnap cookies

These chewy, soft gingersnap cookies have a lovely sugary coating and are absolutely bursting with ginger flavour. You'll love this one!

After two weeks in a row baking special requests, this week I was directionless. I had absolutely no idea what to bake. I flipped through my recipe books, and while nothing was really jumping out at me, I was kinda leaning towards a triple chocolate chip cookie (stay tuned, we’ll get to it eventually). But again, while chocolate chip cookies always sound good, I wasn’t really excited about them. And then I saw a recipe for gingersnaps. It’s definitely gingersnap weather. This is one of those cookies that I always associate with winter and Christmastime, and we’re definitely hitting winter weather here. We just had a huge rainstorm, and it’s been windy all day today. It’s this time of year that I start to crave ginger cookies.  (more…)

double chocolate cherry cookies

Rich, dense, Double Chocolate Cherry Cookies – full of dark chocolate chunks and brandy-soaked tart cherries.

OMG, can I just start by saying this is an amazing cookie? Because this? Is an amazing cookie! Wow. Seriously. The cookie itself is intensely chocolate-y, made with both melted chocolate and cocoa powder, plus there are lots of chocolate chunks both inside and on top. And the cherries? Soaked in kirsch. Yum. And on top of all that, there’s a hint of almond flavouring too. My only complaint about this recipe is that it only made 39 cookies, and I want to eat them all. My recommendation would be to make a double recipe. And eat them all fresh from the oven when they’re still soft and gooey.  (more…)

s’mores cookies

Rich & gooey S'mores Cookies, full of marshmallows and chocolate with barely enough cookie to hold them together. One of my most popular cookies!

Normally I’ll pick my weekly cookie recipe based on what I happen to feel like making. This week, however, we have a special request. One of my coworkers (one of my favourite coworkers) is leaving us. Boo! But before she leaves, she’s asked for a couple of going-away cookies. And one of them is s’mores cookies. She’s actually the reason I made the last s’mores cookies I tried, too. See how much I love my coworkers?? This should come as no surprise – my coworkers are awesome.  (more…)

chocolate chip chocolate oatmeal cookies

Chocolate Chip Chocolate Oatmeal Cookies with crunchy walnuts – this is a great cookie jar cookie!

I was thinking a good old-fashioned oatmeal cookie would be good this week. Maybe with some dried cranberries or chocolate chips or something? So that’s what I started out looking for. But then I found this recipe and got a bit sidetracked. Yes, it’s an oatmeal cookie, but with a twist. First off, it’s chocolate oatmeal. Yum! I’ve made chocolate oatmeal cookies before, and they were delicious (which is one of the reasons this recipe caught my eye). Secondly, there’s a hint of coffee added to boost that chocolate flavour. And? Chocolate chips and nuts. Lots of nuts. Two kinds! But that’s only because I ran out of walnuts and had to make up the difference with some pecans (oops). But feel free to use two kinds of nuts, too! Or one. Whatevs. They’re cookies, not rocket science. Use whatever you want!  (more…)

brandied cherry nut cookies

Brandied Cherry Nut Cookies – yes, the cherries in these lovely tender cookies are first soaked in brandy for several hours, then combined with crunchy toasted nuts.

I’ve been wanting to make this particular recipe for a long time but kept forgetting that the cherries need to soak in brandy overnight. Yes, you read that right. The cherries? Soak in brandy for at least 12 hours. Wow. But what kept happening was Sunday would roll around, I’d start getting ready to bake, and I’d realize once again why I haven’t made this recipe yet. This time I actually set myself a reminder on my calendar to make sure I got things started the day before.  (more…)
