I’ve mentioned before that I’m not a fan of sugary things, and that includes marshmallows. But I am a fan of trying new recipes. When a friend of mine was raving about some homemade marshmallows she tried from a local bakery, I was intrigued. I didn’t even know you could make marshmallows at home! So I looked up some recipes and gave it a shot. Oh my, homemade marshmallows are nothing like store-bought. They’re so light and fluffy. Yes, generally too sugary for my taste, but I’ve experimented with different flavours over the years and I’ve definitely indulged in more than a few of them. Especially dipped in chocolate. (more…)

I’ve said it before – if you ask me my favourite food, I’ll say “chocolate”. Hands down. So it’s surprising to see that I’ve only made a couple truly chocolate cookies so far. I’ve made several cookies with chocolate chips or chunks, but I haven’t done a lot of actual chocolate cookies. Time to remedy that. technical difficulties
I seem to be having some server issues or something. I can only connect to my site intermittently and keep getting time out errors – is anyone else having problems connecting? lemon poppy seed cookies
I love citrus, especially in the summer. Lemon tarts and homemade sorbet, fresh squeezed lemonade, lime mojitos and margaritas. So of course I’ve had to compile a list of citrus cookies too. I’ve had my eye on this recipe for a little while now and I was really hoping it wouldn’t be too warm to bake this week (note: this post is actually from a few weeks ago, before the hard disk/water glass incident). I bought my lemons and poppy seeds and was all ready to go. But I had the ingredients for some no-bakes waiting in the wings just in case. (more…)
no-bake chocolate macaroons
It’s still too hot to be using the oven, so I’m continuing on with the trip down memory lane and my mom’s no-bake cookie recipes. This is probably the one my mom made more than any other. It’s not my absolute favourite – that one’s still to come – but it was definitely one of my favourites and I was always happy to see them when I came home from school. peanut butter butterscotch no-bake cookies
It’s another no-bake week! Not just because it’s too hot, but because I’m all baked out. A friend of mine asked me to supply a couple hundred cookies for an event on the weekend and I ended up baking Friday night and most of the day Saturday as well. So Sunday? No-bakes.
This is one of the few recipes I remember my mom making when I was a kid. I’ve mentioned it before, but she has never really enjoyed baking. I’m not saying she’s not good at it, but there are a million things she’d rather be doing instead. As a result, she’s always been a big fan of no-bake recipes. technical difficulties…
If anyone is waiting for an update, unfortunately it’s going to be a few days yet. Someone (ahem) spilled an entire glass of water not only on the external hard drive where I store my photos, but also on the backup drive. Well. That was helpful. Maybe I should be storing those separately… In the meantime, I’m trying to give them ample time to dry out before I see what I can salvage. Fingers crossed!

Will I start getting hate mail if I say I hate summer? Okay, I don’t really hate summer, but I’m really getting tired of this hot weather. Seriously, would a cloudy day be too much to ask for? Maybe a little rain? Just a wee shower? A cool breeze?
My kitchen is just not a happy place to be right now.
I decided to be brave (crazy?) and actually bake something this week though. I waited until things cooled down a bit in the evening. I made sure the outside door off the kitchen was open and set up my fan by my oven, and it actually wasn’t too bad. Of course it helped that this wasn’t a particularly large recipe and the cookies baked quick, so the oven wasn’t on that long. (more…)

chocolate peanut butter no-bake cookies
Vancouver weather has thrown me for a loop again already. Less than a week ago it was cold and rainy – I was wearing jackets during the day and turning my heat up at night. Now? Heatwave. It’s just too stinkin’ hot to use my oven. Especially since my kitchen is south-facing and gets the worst of the heat. Sorry. No baking this week. I was thinking of making some pâte de fruits or caramels, but I didn’t want to be stirring and boiling things on the stove for any length of time either. And I was worried it was too warm for them to set up properly. So we’re on to the first of the no-bake cookies! (more…)
toffee pecan cookies
The weather in Vancouver has turned cool and rainy again (boo), and I found myself craving fall flavours. I was looking at a few different ginger cookies, but this toffee pecan cookie won out. It’s from Tish Boyle’s The Good Cookie. Every recipe I’ve tried from this book has lived up to that name, including this one. It’s a problem – I want to eat them all. (more…)

honey almond nougat
I was at the Farmer’s Market a couple weeks ago and there was a woman selling homemade nougat. And I realized that the only time I’ve ever had nougat has been in candy bars. Cheap, mass-produced candy bars. I feel like I’ve been missing out here. I had a look both online and in my books and read up on making nougat. While there are a lot of variations – different flavours, different additions – most of the basic white nougat (Italian Torrone) recipes I found are very similar with a few minor differences. Some call for the honey and sugar to be heated separately, some together. Some call for the sugar to be added to the eggs when they’ve reached soft peak, some when they’ve reached firm. And some call for butter or cocoa butter to be added at the end, while some skip that step entirely. (more…)

I decided to get back to basics this week with a chocolate chip cookie. I had a lot of different recipes to choose from, so I opted to go with one from a book I haven’t baked anything from yet – Chewy Gooey Crispy Crunchy Melt-in-Your-Mouth Cookies by Alice Medrich. What a mouthful, eh? What I love about this book is that the cookie recipes are organized by texture. In addition to those in the title, there are also Chunky and Flaky recipes. This one falls into the Chunky category. And it definitely lives up to that name. Just look at it. (more…)
